Either way here it goes and please note, my food photography is seriously lacking.
What you need:
1 large tub of plain low fat Greek yogurt (mine came in 24oz)
1 package of frozen spinach (thawed and dried)
1 can artichoke hearts (chopped)
1 package of Knorr recipe mix
1 handful of cheese (I used mozzarella because it was convenient) - optional
and whatever you choose for your dipping pleasure. Today I used chips, but the Hawaiian bread bowls are always a hit, and veggies are a healthy alternative.
First you dump your yogurt into a bowl... I have to not here that because of the texture of greek yogurt, this version of spinach dip isn't the creamiest I have ever tasted, but to me, its guilt free so I'm willing to make the sacrifice.
Add 3/4 spinach and mix well. Make sure the spinach has as little water left as possible. Especially with Greek yogurt's tendency to get watery. If you really like spinach you can use the whole thing, I did but I think maybe 3/4 would have been better.
Add a handful of chopped artichoke hearts.
This is where my recipe takes a turn for "to taste." I added the whole package of Knorr mix but it seemed a bit too much. Maybe it was the flavor of the yogurt or maybe adding the artichokes. Maybe start with half and taste test. Add as much as you like.
You can be done here and eat as is. I had a few bites and decided to put a couple spoonfuls in a separate bowl and mix in a handful of cheese. Then I popped it in the microwave for 30 secs and it was good warm too.
If you decide to warm the whole thing mix in a little cheese and pour it into an oven safe dish. Top with a little more cheese and cook (at about 350-400) until cheese is melted and dip is bubbly.
